Blackberry Chocolate Cookie Sandwiches

I have learned a very significant life lesson and feel obligated to share it with you guys, so listen carefully:

Make friends with people who have mad baking skills and your life will be sweet!

You see, one of my nearest and dearest friends, Laura, knows her way around the kitchen and she is not afraid to try new recipes. What is even better than her baking skills is her willingness to share her sweet treats!

And THAT is how I ended up with THESE:

These incredible blackberry chocolate cookie sandwiches actually have a nice story behind them.  It all happened by accident and started when Laura forgot some Tupperware at my house after bringing over cheese and crackers for girls night.

The two of us had a double date with our boys the next week, which coincidentally was also the day after I made my Halloween treats.  I knew it would be very dangerous to leave all those sinful treats in my house, so I stuffed a few of the treats into the Tupperware before returning it to her.

And that is when we had the delicious idea of continuing The Great Tupperware Transfer.  Which means we will keep passing the Tupperware container back and forth, each time gifting the other with some freshly baked goods.

Kind of like The Sisterhood of the Traveling Pants, except we don’t pass a pair of jeans back and forth but baked goods instead.

Come to think of it, I hope I still fit in my jeans throughout this exchange!

Not only do these cookies look absolutely adorable, but they taste heavenly.  The chocolate cookie part simply melts in your mouth with a rich chocolaty flavour! And the purple icing is not due to artificial colours, but rather from 100% real and fresh blackberries!

My only problem is that the bar is set so high with these cookies that I now have to go and think of something amazing to give back to her! Wish me luck!

    Talk to me Nienke, I’ve got many a treat recipe under my sleeve. Those cookies do look stupendous! As were the cheese and crackers originally in that container.
